Sweet Potato Balls
Ingredients
500g Yellow flesh sweet potato
60g caster sugar
60g plain flour
60g tapioca flour
Pinch of salt
2 tbsp concentrated coconut milk
30g grated white coconut shreds

Method
1 | Peel and slice sweet potatoes. Steamed till cooked. |
2 | Combine step 1 with the rest of the ingredients together. Knead into a dough |
3 | Coat your palm with some flour to prevent batter from sticking onto it. |
4 | Pinch some batter (from step 2) and roll into a small ball. Drop gently into hot oil. Repeat process with all the remaining batter. Scoop it up when it turns yellowish brown. |
